Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Put zucchini in strainer and press or squeeze with hands to get excess liquid out.
  3. Beat eggs, sugar, applesauce, and oil together.
  4. Add flour, baking powder, soda, cinnamon, salt, vanilla, and nuts.
  5. Mix together by hand.
  6. Add zucchini (minus liquid).
  7. Beat mixture.
  8. Pour into 2 greased and floured loaf pans ( I use the baking spray with flour in it).
  9. Bake 40 to 45 minutes at 350°F (I bake on middle shelf for 20 minutes then rotate and bake for another 20 to 25 minutes)
  10. Recipe may be doubled.
