Tuna with Grape Tomatoes and Greens

Ingredients:

Directions:

  1. Grape tomatoes, halved
  2. /4 cup peanut oil
  3. Juice of 1/2 lemon
  4. Tablespoon rice vinegar
  5. Teaspoon soy sauce
  6. Teaspoon hot pepper sauce
  7. Tablespoon capers
  8. Tablespoon chopped cilantro
  9. Place asparagus, tuna, chickpeas, lettuce, cucumber and tomatoes in a salad bowl.
  10. Whisk peanut oil, lemon juice, vinegar, soy sauce, hot-pepper sauce, capers and cilantro in a small bowl to make a vinaigrette.
  11. Toss vinaigrette with the salad ingredients; serve immediately.
