Ingredients:

Directions:

  1. Cut tomatoes into quarters
  2. Place in bowel with olive oil and toss until well coated
  3. On sided cookie sheet, place parchemt paper to cover
  4. Lay a single layer of the coated tomatoes skin side down
  5. Sprinkle on pepper, salt and basil
  6. Scatter out fresh garlic, making sure most of it lands on tomatoes
  7. Put in oven for 2.5 hours at 325 degrees.
  8. Temprature varies from oven to oven, make sure to check every 30 min. until you get the feel for how your oven will do.
  9. Tomatoes will be done when they shrink up to half their size, make sure not to burn them, it is easy to do if you don't watch them.
