Tofu Creamed Spinach

Ingredients:

  • 1/4 cup onion
  • 1 tsp garlic
  • 9 oz spinach (1 bag)
  • 1/2 cup skim milk

Directions:

  1. Pam skillet-add onion and garlic-cook till soft
  2. Add spinach-cook-stirring often-till wilted
  3. Place tofu milk and cheese in blender-puree till smooth
  4. Stir pureed tofu into spinach
  5. Cook till warmed through
  6. Serve
