Ingredients:

  • 3 eggs
  • 2 cups sugar
  • 1 tsp. vanilla
  • 2 cups of grated zucchini
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1 tsp. salt
  • 1/2 cup. of chopped walnuts optional

Directions:

  1. Beat eggs
  2. Gradually add 2 c. sugar
  3. Stir in 1 c. vegetable oil, 1/4 tsp. baking powder and 1 tsp. salt
  4. Stir in zucchini
  5. In a medium bowl whisk together 2 c. flour, 1tsp. cinnamon, 1 tsp. baking soda, 1/4 tsp. baking powder and 1 tsp. salt
  6. Mix wet ingredients with dry ingredients
  7. Spray 2 bread pans or grease and flour
  8. Bake for 1 hour at 350
