Ingredients:

  • 4 eggs
  • 2 cups sugar
  • 1 1/2 cups oil
  • 14 oz pumpkin
  • 3 cups flour
  • 1 tbsp cinnamon
  • 1 tsp salt
  • 2 cups raisins

Directions:

  1. Beat eggs slightly.
  2. Add sugar, oil and pumpkin.
  3. Beat thoroughly.
  4. Add flour, cinnamon, baking soda, baking powder and salt to creamed mixture.
  5. Blend until smooth.
  6. Stir in raisins.
  7. Fill muffins tins 2/3 full.
  8. Bake at 400 degrees for 15 minutes.
