Tahitian Pork Curry with Taro

Ingredients:

  • 1 kg taro root (tarua)
  • 1 1/2 kg pork loin
  • 6 tsp curry
  • 6 tsp paprika
  • 2 cloves garlic
  • 2 tsp flour
  • 200 ml coconut milk
  • salt , to taste
  • pepper , to taste

Directions:

  1. Get all the ingredients and tools ready.
  2. Wash and peel the taro, cut into cubes and blanch 10 minutes in salted water.
  3. Drain and put aside.
  4. Peel and chop the onion and the garlic.
  5. Cut the meat into cubes.
  6. Sear the meat in a heavy Dutch oven, add the onion, paprika and curry, singe with the flour.
  7. Add salt and pepper.
  8. Put water, add garlic and the taro.
  9. Cook for 40 minutes stirring regularly.
  10. Check seasonings, bind with the coconut milk and serve hot.
