Sweet Potato Souffle

Ingredients:

  • 2 large cans sweet potatoes or yams
  • 1 cup. sugar
  • 2 eggs
  • 1 (8oz). jar marshmallow cream
  • topping
  • 1/2 cup. butter (1 stick)
  • 1/2 cup. brown sugar (packed)

Directions:

  1. In a large mixing bowl, cream together butter, sugar, and eggs.
  2. Add drained Sweet Potatoes.
  3. Mix with electric mixer until well blended.
  4. Add Marshmallow Cream (I've discovered if you add a bit at a time and mix well, it works better.)
  5. Pour into 2 1/2 quart, lightly greased baking dish.
  6. Topping:
  7. In a seperate bowl, melt butter.
  8. Stir in brown sugar until well mixed.
  9. Add corn flakes and stir to coat with sugar/butter mixture.
  10. Spread on top of potatoes.
  11. Bake 35-40 minutes at 350*.
  12. (This really makes allot, so recipe can easily be cut in half for smaller gatherings.)
