Sweet Potato Souffle

Ingredients:

  • 1/4 cup butter
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 cup milk (may need 1 cup)
  • 1 tsp cinnamon
  • 3/4 cup seedless raisin (optional)

Directions:

  1. Boil potatoes until tender.
  2. Let potatoes cool and then place in mixing bowl and add all ingredients except marshmallows.
  3. Bake for 15 to 20 minutes at 350 degrees.
  4. Place marshmallows on top and bake until marshmallows are brown.
