Sweet Potato and Lentil Soup

Ingredients:

  • 2 cups water
  • 64 g lentils
  • 3/4 cup onion
  • 1/2 tsp cumin
  • 1/2 tsp cinnamon
  • 1/8 tsp ginger
  • 1/8 tsp cloves
  • 1/2 cup cilantro

Directions:

  1. 1. Peel and roughly chop the onions and sweet potatoes - can be chunky.
  2. 2. Combine with the stock or water, lentils, garlic, cumin, cayenne and turmeric in a pot.
  3. 3. Cover and bring to the boil. Simmer until the potatoes and lentils are cooked - about 20-30 minutes.
  4. 4. Puree the soup, adding in the coriander and the juice of the lemon. Add salt and pepper to taste (lots of pepper for me).
