Sweet Potato and Kale Soup

  1. Cut and discard the thick green ends of kale.
  2. Chop kale.
  3. In a large pot heat olive oil, saute onions and italian seasoning until onions are tender.
  4. Add all the other ingreidents, stir.
  5. Cover and simmer for 25 minutes.
