  1. Spread butter on bread slices. Slice bananas into long, thin strips and make into banana sandwiches, sprinkling with a little white sugar and securely pressing together. Beat eggs and milk together. Add cinnamon and pour into a shallow plate. Soak the banana sandwiches in the mixture.
  2. In a frypan, heat oil and butter together and when sizzling, add sandwiches. Cook until crispy and browned. Drain on paper towels and keep warm in the oven until the whole batch is cooked.
  3. Cut each sandwich in half and serve with maple syrup and fresh fruit. Dust with icing sugar if desired.
