Banana Cinnamon French Toast

Ingredients:

  • 1 large ripe banana
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 tsp cinnamon
  • 4 slices bread
  • 1 1/2 tbsp butter
  • 1/2 cup maple syrup

Directions:

  1. Blend first 4 ingredients in processor until smooth. Transfer to a 9x13 pan.
  2. Place bread in milk mixture and soak until all liquid is absorbed, turning bread occasionally, about 20 minutes.
  3. Melt butter in large, heavy skillet over medium heat. Add bread and cook until golden brown, about 3 minutes per side.
