Spinach, Cucumber, Feta and Red Onion Salad

Ingredients:

  • 4 cups torn spinach
  • 1 medium cucumber , at least paritally peeled and sliced thin
  • 1/2 cup crumbled feta
  • 1/2 medium red onion, sliced thin
  • 1/3 cup olive oil
  • 1/2 tsp sugar

Directions:

  1. Mix dressing ingredients in a small jar and shake until blended.
  2. Let rest in fridge for at least an hour before serving salad.
  3. Assemble salad ingredients and pour dressing over.
