Ingredients:

Directions:

  1. Saute bacon until brown.
  2. Remove bacon from fat.
  3. Add onions to bacon fat and saute until lightly brown, add garlic and mushrooms and sweat.
  4. In a large bowl add spinach, bacon, the ingredients in the hot pan including the fat and the remaining ingredients and mix well.
  5. If the mix is too runny add more panko or parmesan cheese. If it is too dry add another egg or just a little cream or chicken stock.
  6. Shape into 1 to 2 oz cakes and roll in cracker crumbs or panko and fry in a medium heat pan for about 3 minutes per side. Or you could shape into balls and coat with crumbs and deep fry.
  7. How about putting a little cream cheese in the middle of the ball ? then coat and deep fry? WOW! I'm gonna try that!
  8. If you try it before I do, let me know how it goes.
  9. I guess they could be called Spinach Poppers
