Southern Sweet Potato Salad

Ingredients:

Directions:

  1. Cook sweet potatoes in boiling salted water until tender, about 5-8 minutes.
  2. Drain potatoes and toss with lemon juice.
  3. In large bowl, combine mayonnaise, orange juice, honey, orange zest, ginger, salt, and nutmeg.
  4. Add potatoes, celery, and dates, tossing to coat.
  5. Cover and chill.
  6. Before serving, gently stir in pecans.
  7. Spoon salad onto lettuce-lined platter.
  8. Arrange mandarin orange segments around salad.
