Soft and Delicious Two-Hour Whole Wheat Bread

Ingredients:

  • 5 cups warm water
  • 1/3 cup honey
  • 2 eggs
  • 4 -5 cups unbleached flour
  • 2 tbsp yeast
  • 1/3 cup oil
  • 1/3 cup potato flakes
  • 1 tbsp salt

Directions:

  1. Dissolve yeast as per package instructions.
  2. Make a sponge using all ingredients down to and including salt.
  3. Use bread mixer or hand-held electric beaters.
  4. Let rise about 10 minuets.
  5. Add remaining flour gradually as needed to make a soft dough.
  6. Knead on floured board; cover with plastic wrap and let rise until double.
  7. Punch down; shape into four loves; place in greased bread pans.
  8. Cover and let rise again until double.
  9. Bake at 350 degrees for 30 to 40 minuets.
  10. Put hot bread on a towel to cool for a soft crust.
