Ingredients:

  • 1 cup oil
  • 1 1/4 cups honey
  • 3 eggs(extra large)
  • 2 1/2 cups whole wheat flour
  • 1/2 cup wheat germ
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp salt
  • 1 cup walnuts (optional)
  • 1 cup raisins (optional)

Directions:

  1. Preheat oven to 350 degrees F .
  2. Grease & flour 10-inch tube pan
  3. Cream oil, honey & eggs
  4. Sift together dry ingredients
  5. Add grated carrots to creamed mixture.
  6. Add dry sifted mixture and mix well
  7. Add walnuts and raisins
  8. Bake for 1 hour or until done.
