Zucchini Oatmeal Cookies!!

Ingredients:

  • 1/2 cup shortening
  • 3/4 cup honey
  • 1 egg
  • 1/2 cup flour
  • 1 tsp. baking soda
  • 1/2 tsp. ground nutmeg
  • 1/4 tsp. salt
  • 1 cup oatmeal

Directions:

  1. Preheat oven to 375F
  2. Cream together the shortening and honey
  3. Add the egg and beat well
  4. Stir together baking soda, cinnamon, nutmeg, salt, and flour
  5. Add this mixture alternately with the zucchini to the egg mixture
  6. Stir in the oatmeal
  7. Drop by teaspoons on greased cookie sheet
  8. Bake for 10-12 minutes
  9. Makes 5 dozen cookies.
