Ingredients:

Directions:

  1. Heat oil in a saucepan, add onion and garlic until golden brown.
  2. Add water to broth to equal 2 cups
  3. Add broth, corn, beans, salsa, chilli, and cumin to the saucepan and bring to a boil.
  4. Reduce heat and simmer covered until the flavors are blended (about 5 minutes).
  5. Stir in the pork, cilantro, and lime juice.
  6. Simmer until heated through (about 3 minutes)
  7. Serve in bowls, top with sour cream and scallions.
