Black Bean Soup With Cilantro

Ingredients:

Directions:

  1. Cover beans with water and soak over night.
  2. Drain and rinse.
  3. Place in soup pot and cover 2 inches over beans with chicken stock or water.
  4. Add onions, carrots and garlic.
  5. Bring to a boil.
  6. Reduce heat , cover and simmer until beans are very tender.
  7. With a hand blender, puree soup smooth.
  8. Season with salt, pepper, dashes of hot sauce and either fresh chopped cilantro or dried to taste.
  9. Simmer soup another 10 minutes to blend flavors.
  10. Serve in bowls and garnish if desired with dollops of sour cream, grated carrot and finely chopped cilantro.
  11. Yield 8 serving. Soup freezes well
