Ingredients:

  • 5 eggs
  • 1 1/2 cups sugar
  • 3 cups bread flour
  • 1/2 tsp salt
  • 1 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 (16-oz) can pumpkin
  • 2 tbsp plus 2 tsp vanilla extract

Directions:

  1. Beat eggs in a large bowl; add sugar, mixing well.
  2. Combine flour, baking powder, salt, cinnamon, and nutmeg; mix well. Add to egg mixture, beating well. Stir in pumpkin and vanilla.
  3. Drop mixture by tablespoonfuls into hot butter; cook over medium heat until golden brown, turning once. Drain on paper towels.
