Scalloped Potatoes Done in the Microwave

Ingredients:

  • 3 tbsp butter
  • 2 tbsp flour
  • 1 tsp salt
  • 1/4 tsp pepper
  • 3 cups milk
  • 3 1/2-4 cups thinly sliced white potatoes (about 3 medium)

Directions:

  1. Place butter in 1-qt measuring cup.
  2. Microwave at High for 1/2 minute, or until melted.
  3. Blend in the flour and seasonings.
  4. Gradually stir in milk.
  5. Microwave at High 8-10 minutes, stirring every 3 minutes.
  6. Layer half of potatoes, onion and sauce in greased 2 quart casserole.
  7. Repeat layers.
  8. Cover.
  9. Microwave at High for 17 to 19 Minutes, stirring after 10 minutes.
  10. Remove from oven and let stand 5 minutes before serving.
