Sausage Egg Gravy

Ingredients:

  • 2 -3 tbsp flour
  • 6 eggs
  • 1 (12 oz) can evaporated milk

Directions:

  1. Scramble the eggs in a large non stick fry pan. Remove to plate when they are still slightly wet.
  2. Fry sausages in the egg pan. Half way through cooking cut the sausages in bite sized pieces and return to pan, doing a few at a time, cutting with kitchen scissors.
  3. When sausage is done to your liking, sprinkle with flour until all grease is absorbed.
  4. Pour in evaporated milk. Stir until it starts to thicken and then return eggs to the pan. If needed you can add some water to make the gravy the consistency you desire.
  5. Serve the sausage, egg gravy over your favorite biscuits.
