Roasted Garlic Smashed Potatoes

Ingredients:

  • 4 (6 oz) baking potatoes, peeled and cut into 1 inch pieces
  • 3/4 cup low-fat milk
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup coursely chopped roasted garlic cloves

Directions:

  1. Place potato pieces in a large microvave-safe bowl.
  2. Cover bowl, with plastic wrap, and cut a 1 inch slit in center of plastic wrap.
  3. Microwave at 10 minutes.
  4. Let stand for 2 minutes.
  5. Add remaining ingredients to bowl, and mash with a potato masher.
