Roasted Garlic Smashed Potatoes |

a quick weeknight side dish, that can be easily prepared.. Ingredients:
4 (6 ounce) baking potatoes, peeled and cut into 1 inch pieces |
3/4 cup low-fat milk |
1/2 teaspoon salt |
1/2 teaspoon black pepper |
1/4 cup coursely chopped roasted garlic cloves |
1 tablespoon chopped fresh sage |
Directions:
1. Place potato pieces in a large microvave-safe bowl. 2. Cover bowl, with plastic wrap, and cut a 1 inch slit in center of plastic wrap. 3. Microwave at 10 minutes. 4. Let stand for 2 minutes. 5. Add remaining ingredients to bowl, and mash with a potato masher. |
