Roasted Asparagus Spears

Ingredients:

  • 1 lb asparagus
  • 1/4 tsp ginger
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper

Directions:

  1. Pre-heat oven to 350 degrees F.
  2. Wash asparagus and cut off bottoms. Peel stalks with vegetable peeler, if desired.
  3. Combine 1 TBSP toasted sesame oil, 1/4 tsp ginger, 1/4 tsp kosher salt (optional) and 1/4 tsp. pepper in a zip-lock bag.
  4. Add asparagus to bag and marinate thoroughly.
  5. Line baking sheet with tin foil. Lay asparagus spears on foil.
  6. Cook approx. 15 minutes, or until tender.
  7. Other variations for marinade:
  8. Olive oil and lemon juice with chopped garlic clove
