Ingredients:

  • 1 1/2 cups coconut milk
  • 2 1/2 cups water
  • 1 small onion
  • 2 sprigs thyme
  • 1/8 tsp salt
  • 2 cups rice

Directions:

  1. In a pot, combine coconut milk, water and seasonings, bring to boil.
  2. Add rice, red kidney beans, salt and stir.
  3. Add scotch bonnet pepper.
  4. Cover and reduce heat, allow to simmer until grains are soft.
