Ingredients:

Directions:

  1. Roll out one crust to line bottom of pan.
  2. With second crust make lattice strips for top of pie.
  3. Set aside.
  4. Preheat oven to 400.
  5. In medium bowl combine sugar, flour, nutmeg and salt.
  6. Add eggs and mix well by hand until smooth then stir in rhubarb.
  7. Pour into unbaked crust and top with lattice strips and crimp edges.
  8. Sprinkle top of crust with cinnamon sugar mixture.
  9. Put thin strips of foil around edges of pie.
  10. Bake in preheated oven 25 minutes.
  11. Remove strips of foil then bake another 25 minutes.
