Ingredients:

  • 2 cups flour
  • 1/2 cup sugar
  • 1/2 cup butter
  • 1/2 tsp salt
  • 2 cups sugar
  • 1/2 cup flour
  • 1 tsp vanilla

Directions:

  1. Preheat oven 350°F.
  2. Crust:.
  3. Mix together 2 cups flour, 1/2 cup sugar, 1/2 cup butter, 1 tsp baking powder, 1/2 tsp salt, 1 beaten egg.
  4. Press into ungreased 9 x 13 pan. Save 1 cup of crumble mix for topping.
  5. Filling:.
  6. Mix together well: rhubarb, 2 cups sugar, 1/2 cup melted butter, 1/2 cup flour, 2 beaten eggs, and vanilla.
  7. Pour over crust.
  8. Sprinkle with topping.
  9. Bake 50-60 minutes until top is light brown.
