Ingredients:

  • 16 oz hominy
  • 1 lb pork
  • 10 cups water
  • 1 tbsp oregano
  • 1 large onion
  • 3 cloves garlic
  • 1 tsp salt
  • 2 cups peppers

Directions:

  1. Boil some red chile pods (seeded and rinsed)in 6 cups water for 30 minutes.
  2. Add cubed pork stew meat, posole and 4 cups water. simmer covered 30 minutes.
  3. Add diced onion, minced garlic, oregano, salt and 3 bay leaves, and 1 cup bueno red chile sauce (from frozen) simmer 1-2 hours more, add hot red chile to taste. great with hot buttered tortilla, and a fried egg on top! garnish with diced onion, cilantro, avocado - yum! Buen Provecho!
