Directions:

  1. If using, hull the strawberries and cut in half if large.
  2. Place the bananas and berries in a freezer bag and freeze overnight until solid.
  3. Soften at room temperature for 15 to 20 minutes. Whiz in a food processor until smooth and creamy. Serve now as soft-serve ice-cream, or freeze in a plastic container for a further 3 hours until firm, then soften for 10 minutes out of the freezer.
  4. Scoop onto four sponge fingers and sandwich with the remaining fingers.
  5. Scatter with berries and serve
