Ingredients:

Directions:

  1. Pre heat oven to 180 degees Celsius Grease a 20 cm springform cake tin.
  2. Put the grated carrots in a bowl and using a wooden spoon, mix in the sugar until conbined.
  3. Mix in the almond powder and the baking powder and mix until combined.
  4. Add the eggs and mix in until combined.
  5. Pour into well greased cake tin and bake for about 40 - 50 minutes or until the centre is firm to the touch.
  6. Cool completel before taking out of the cake tin. Dust with icing sugar and serve.
