Carrot Cake - Fruited Carrot Loaf or Christmas Muffins

Ingredients:

  • 2 1/4 cups flour
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 3 eggs
  • 1 1/2 cups sugar
  • 3/4 cup vegetable oil
  • 1/2 cup milk
  • 1 tsp vanilla
  • 1/2 cup raisins
  • 1/2 cup pecans (chopped )

Directions:

  1. In bowl: beat eggs until smooth and creamy, add sugar, oil, milk, vanilla and beat well.
  2. In large bowl combine and whisk together flour, baking powder, baking soda, cinnamon and salt.
  3. Make well in dry ingredients, add the egg mixture mixing until thoroughly combined.
  4. Stir in grated carrots, coconut, raisins and pecans.
  5. Pour into two greased loaf pans ( approximately 9 x 5 and preferably lined) baking in a 350 oven 60 - 70 minute. (ovens vary).
  6. Remove from oven, place on wire rack until cooled completely.
  7. Remove from pan, wrap in foil, refrigerate overnight before slicing.
