Pumpkin Chocolate Chip Muffins

Ingredients:

  • 2 1/2 cups pancake mix
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1/2 cup water
  • 2 eggs
  • 2 tsp vanilla
  • 2/3 cup mini chocolate chip

Directions:

  1. Preheat oven to 350.
  2. In a bowl, combine pancake mix, sugar, pumpkin pie spice and salt.
  3. Add water, eggs, vanilla and pumpkin and stir until moistened. Batter will be slightly lumpy.
  4. Fold in chocolate chips.
  5. Line a muffin pan with paper liners or cooking spray. Fill muffin cups 2/3 full.
  6. Bake 18-20 minutes.
