Ingredients:

Directions:

  1. Preheat the oven to 180 degrees celcius
  2. Grease a 6 large muffins pan ith butter or margarine
  3. Place all the dry ingredients apart from the almond nuts in a large bowl and shift them
  4. In a seperate bowl beat the eggs with the oil, vanilla essence and the milk
  5. Make a well in the middle of the dry ingredients
  6. Pour in the egg mixture and mix just to combine
  7. Add the mashed pumpkin and give a quick mix
  8. Finally add the almond nuts and mix thoroughly...do not over mix
  9. Place in muffin pans and bake on the middle shelf for around 20-25 minutes or until golden brown and a toothpick inserted comes out dry
  10. Remove from oven
  11. Allow to cool and serve warm with plain yoghurt or dollop of sour cream..enjoy
