An easy yummy muffins that will entice your tastebuds
Ingredients:
1 cup plain flour or wholemeal
1/2 cup rolled oats
1/2 cup brown sugar
1 cup butterscotch pumpkin (boiled, mashed and cooled)
2 eggs
1/4 cup vegetable oil
1/2 cup milk
2 teaspoon baking powder
2/3 teaspoon bicarbonate soda
1/2 cup chopped almond nuts
1/4 teaspoon salt
2 tablespoon vanilla essence
1/2 teaspoon nutmeg powder
1/2 teaspoon cinnamon powder
Directions:
1. preheat the oven to 180 degrees celcius
2. grease a 6 large muffins pan ith butter or margarine
3. place all the dry ingredients apart from the almond nuts in a large bowl and shift them
4. in a seperate bowl beat the eggs with the oil, vanilla essence and the milk
5. make a well in the middle of the dry ingredients
6. pour in the egg mixture and mix just to combine
7. add the mashed pumpkin and give a quick mix
8. finally add the almond nuts and mix thoroughly...do not over mix
9. place in muffin pans and bake on the middle shelf for around 20-25 minutes or until golden brown and a toothpick inserted comes out dry
10. remove from oven
11. allow to cool and serve warm with plain yoghurt or dollop of sour cream..enjoy
