Potato Spinach Soup

Ingredients:

Directions:

  1. Melt butter in a pan.
  2. Add onions and celery.
  3. Cover and cook until tender - about 15 minutes.
  4. Stir occasionally.
  5. Blend in flour, and add potatoes, water and salt. Stir constantly until boiling.
  6. Simmer 30 minutes.
  7. Add spinach cook 2 minutes.
  8. Then add cream.
  9. Top with grated cheese if desired.
