Ingredients:

  1. In a large bowl, combine egg, meal, 1/8t.
  2. Salt and a dash pepper.
  3. Rinse potatoes; pat dry with paper towels.
  4. Stir potatoes and onion into egg mixture.
  5. In a large skillet, heat 1/4c.
  6. Cooking oil over med.
  7. Heat.
  8. For each latke, spoon about 2T.
  9. Batter into the hot oil; spread to make a circle about 2 1/2 in diameter.
  10. Cook for about 2 1/2 minutes or until golden brown; turn and cook on the other side the same amount of time.
  11. Add more oil during the cooking as necessary.
  12. Drain on paper towels and serve with applesauce or sour cream.
  13. Makes approximately 32 latkes.
