Potato Cakes With Bacon And Tomato Relish

Ingredients:

  1. Relish:
  2. Cook onion with a spray of oil 4 mins or until soft.
  3. Add tomatoes, viengar and sugar- cook about 20 mins or until soft and pulpy.
  4. Stir through salt, pepper and parsley. Cover and set aside.
  5. Potato Cakes:
  6. Roughly grate potatoes. Place in sieve and squeeze out excess liquid.
  7. Transfer potato to bowl, add slat, pepper and chives and mix to combine.
  8. Heat oil in non stick frypan- add spoonfuls of potato mix and flatten to form round cakes about 10cm in diameter.
  9. Cook 3 mins each side or until golden brown.
  10. Dain on anbosrbent paper and keep warm.
  11. Cook bacon until crisp and golden.
  12. To serve, divide the potato cakes between plates, top with tomato relish and bacon.
