Pork Chops with Crunchy Parmesan Gratin

Ingredients:

Directions:

  1. In large frying pan, melt 2 tbsp butter over medium heat; cook onions for about 5 minutes.
  2. Add red peppers and cook for another 5 minutes.
  3. Stir in salt, pepper and thyme.
  4. Transfer mixture to a bowl and set aside.
  5. In same frying pan, melt remaining butter.
  6. Brown chops on both sides.
  7. Spread half of the onion mixture in a 7 by 11 inch baking dish.
  8. Top with pork chops and then with remaining onion mixture.
  9. Drizzle with chicken stock.
  10. Cover with foil and bake in a preheated 400F degree (200C) oven for 40 minutes or until chops are tender.
  11. For gratin, combine all ingredients.
  12. Sprinkle over casserole.
  13. Bake for 10 minutes longer to form crisp topping.
  14. If desired, brown topping by broiling for another 2 minutes.
