Ingredients:

Directions:

  1. Drain canned spinach well, reserving 1/2 cup liquid. Set aside
  2. Combine butter, onion, and flour in a pan
  3. Stir well and cook for about one minute
  4. Gradually add reserved spinach liquid and evaporated milk, cook until slighlty thickened, stirring constantly.
  5. Remove from heat
  6. Add cheese and seasonings to sauce, stirring until cheese is melted.
  7. Add drained spinach and optional mushrooms, mixing well
  8. Dip may be frozen. Thaw and heat before serving.
