Poached Fish in Shrimp Sauce

Ingredients:

  • 8 fish fillets
  • 1/2 cup milk
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 (6 1/2 oz) cans shrimp, drained
  • 1/3 cup margarine
  • 1/2 cup flour
  • 2 tsp salt
  • 1/2 tsp black pepper
  • 1 1/2 tsp sweet paprika
  • 1 1/2 quarts half-and-half
  • 1 (4 oz) can mushrooms

Directions:

  1. Sauce:Melt margarine in a saucepan over low heat.
  2. Stir in flour then gradually add the half and half.
  3. Cook over medium heat until thickened, stirring constantly.
  4. Add remaining ingredients and simmer over very low heat while preparing fish.
  5. Fish:Roll up each fillet from the larger end and secure with a toothpick and place in a glass 9 x 13 baking dish.
  6. Add milk, salt, and pepper to the fish.
  7. Cover with waxed paper and microwave for 3 minutes on full power.
  8. Remove fillets from baking dish, discard liquid and then put the fish back into the dish.
  9. Pour hot shrimp sauce over the fish and bake for 15 minutes at 350 degees.
