Ingredients:

  • a pie pumpkin (small)
  • 1 cup of sugar
  • 1/2 tsp of salt
  • 1 1/2 tsp of cinnamon
  • 1/2 tsp of nutmeg
  • 1/2 tsp of ginger
  • 1 1/2 cup pumpkin
  • 1 2/3 cup carnation milk
  • 1/2 tsp allspice
  • 1/2 tsp cloves
  • 2 eggs
  • (1 pie pumpkin usually makes 2 pies if not more!)

Directions:

  1. Cut pie pumpkin in half.
  2. Remove seeds and bake covered with foil for about an hour at 350-375.
  3. Remove pumpkin and mash
  4. Mix all ingredients together until smooth.
  5. Pour into crust and bake 15 minutes at 450
  6. Reduce heat and bake 45 minutes at 325 or until knife comes out clean
