Old Charleston Plantation Oyster Bisque

Ingredients:

  • 2 quarts oysters
  • 2 small garlic cloves
  • 1 1/2 cups oyster liquor
  • 2 1/2 cups light cream
  • salt and pepper

Directions:

  1. Drain the oysters; cook till the edges curl.
  2. Mince and mash through a strainer.
  3. Add oyster liquor to the puree.
  4. Mince the garlic.
  5. In a small skillet, fry the onions and garlic in butter until transparent but not brown.
  6. Add to a medium sized pot.
  7. Add the cream, oyster puree and liquor.
  8. Heat together with seasoning, but do not boil.
