Ingredients:

  • package of velveeta spicy cheese- if you don'tsp find the spicy, get regular and add some spicy jack cheese.

  • 1/4 cup finely chopped cilantro
  • 1/4 cup finely chopped onion if desired
  • oil or pam skillet spray (for frying pan)

Directions:

  1. Cube the Velveeta cheese into very small cubes and mix with the grated cheeses. Mix in other ingredients, except for the oil.
  2. Heat the tortillas over the fire or warm in microwave.
  3. Fill tortilla's with the cheese mixture and tuck in one end and roll tightly.
  4. Heat a very small bit of the oil or heat pan with the Pam skillet spray.
  5. Heat in the skillet until all sides are very lightly crisp and cheese is melted. Adjust heat on stove as needed
  6. Do not overfill. About 1/4 of what you would put in a burrito.
  7. Serving size will depend on how big your tortilla's are.
  8. Enjoy. Dip in Guacamole or salsa if you like.
