Directions:

  5. /4 cup milk or 3/4 cup soymilk (to make the muffins dairy-free)
  6. Cup raisins
  7. Chopped apple
  8. /2 cup oil
  9. Cup all-purpose flour
  10. Cup quick oats
  11. /3 cup sugar
  12. Teaspoons baking powder
  13. Teaspoon salt
  14. Teaspoon nutmeg
  15. Teaspoons cinnamon
  16. Directions:
  17. Beat egg; stir in remaining ingredients, mixing just to moisten.
  18. Pour into 12 greased or paper-lined muffin cups until 3/4 full.
  19. Bake at 400° for 15 to 20 minutes.
  20. Serve cool or piping hot with butter.
