Nutt House Black-Eyed Pea Salad

Ingredients:

  • 1 (2 oz) jar diced pimentos, drained
  • 1/4 cup red wine vinegar , plus
  • 1/4 cup sugar , plus
  • 2 tbsp sugar
  • 1/4 cup canola oil , plus
  • 2 tbsp canola oil
  • 1/4 tsp salt (to taste)

Directions:

  1. Combine first 3 ingredients in large bowl. Mix remaining ingredients in a separate bowl. Mix well and pour over pea mixture.
  2. Cover and chill for at least 3 hours. More is better.
