Directions:

  1. Place peas in a saucepan with water to cover.
  2. Bring to a boil, reduce heat and simmer, uncovered, until tender, about 30 min.
  3. Drain and move a bowl.
  4. Meanwhile, make the vinaigrette. In a medium bowl, whisk mustard, garlic, vinegar, and slowly whisk in oil.
  5. Pour half the vinaigrette over peas.
  6. Add bacon, tomatoes, onion, celery, and greens and dress with remaining vinaigrette.
