My Italian Friend-apostrophe-s Zucchini

Ingredients:

  • 1 lb zucchini
  • 1 tsp butter
  • 1 cup parmesan cheese , freshly grated if possible
  • salt to taste

Directions:

  1. Shred zucchini finely, preferably in a food processor.
  2. Saute with 1 T butter in a large skillet over a medium hot flame, stirring until all the zucchini shreds have turned a pretty bright green. Keep cooking and stirring until the shreds have collapsed and extra liquid has cooked away.
  3. Stir in the grated cheese and cook for another minute or so, until melted.
  4. Salt to taste.
